These are family favorites that my family will actually eat!  You can't go wrong with a receipe if everyone will eat it!  Enjoy ~



Chicken Chili

3 carrots


3 sticks celery

1 large onion


1 whole med. zucchini

2 small head broccoli


1 c sliced fresh mushrooms

2 gloves garlic


1 large can diced tomatoes

1 large can tomato sauce


2 reg. cans kidney beans

2 TBSP butter


2 large chicken breast chopped into chucks

salt & pepper


2 TBSP chili powder (optional)

any other veggies



Directions:  In large pot, melt butter.  Add chopped carrots, celery & onion and cook 5 minutes.  Then add chopped zucchini, broccoli and any other veggies into the pot.  Cook until onions are translucent.  In a separate pan cook the chicken with the garlic.  Add the mushrooms once chicken is cooked thru.  Add can of diced tomatoes, tomato sauce and the kidney beans into the large pot.  Add the cooked chicken & mushrooms to the pot.  Salt & pepper and add the chili powder (optional).  Bring to a boil, then turn to low temperature & simmer for 1 hour.  You could do this recipe in a crock-pot as well - cook the chicken first before you put all ingredients together on low for 5 to 6 hours.



Cranberry Chocolate Cookies

2 eggs


1 2/3 c brown sugar

1 3/4 c flour


1 tsp B.P.

1/2 c white chocolate chips


1/2 c oil

1/2 c peanuts


1/2 c coconut

1 tsp vanilla


1/2 tsp B.S.

1/2 c dried cranberries



Directions:  Beat together eggs, sugar & vanilla.  Stir in flour, B.P & B.S. Add remaining 5 ingredients and chill 1 hour.  Bake @ 350 F for 10-15 minutes.



Fast & Easy Mac & Cheese

1/4 c flour


2 c noodles

1/4 c butter


2 c cheddar cheese

1 tsp salt


1/4 c fresh bread crumbs (optional)

2 c milk



Directions:  Melt butter in saucepan on low - mix in flour & salt and stir for 1 minute.  Stir in milk slowly until thickened.  Add 1 1/2 c of cheddar cheese stir until melted.  Cook noodles.  Put into a baking dish.  Pour cheezy sauce over noodles and stir so it's all mixed into the noodles. Sprinkle 1/2 cup of remaining shredded cheese over top of noodles. Bake for 25 - 30 minutes in oven @ 350 F.  Sprinkle bread crumbs on to of cheese. (optional).   ~ Try different kinds of cheese with different kind of noodles.  Trust me - the kids will never want to eat the stuff out of the box ever again!!



Charm's BBQ Spare Ribs

1 c ketchup


2 TBSP soya sauce

1 TBSP lemon juice


1/2 c brown sugar

1/2 c water


1 TBSP woresester sauce

1/4 - 1/2 c vinegar


1 c BBQ sauce

2 TBSP heaping cornstarch


1 package beef sausages (optional)

1 package ribs



Directions:  Cook ribs and sausages (optional) at 275oF for 2 to 3 hrs. Pour out grease.  Make sauce in blender with all of the ingredients. Pour over the meat still in the pan and cook for 1 more hour @ 350 F.
